Healthy vegan chocolate chewy peppermint cookies
This holiday season, Natalie and I are both training hard and wanted a holiday cookie that we could feel good about eating. I love chewy cookies and the combination of mint with chocolate so Natalie got to work trying to invent a healthy version of a holiday favorite. With simple ingredients and a few easy steps, you can make a delicious cookie that will ensure all of your gains are in the right places. Leave a few of these next to the fireplace with a glass of almond milk and Santa is sure to bring you everything on your list.
1/2 cup oat flour
1/2 cup dried shredded coconut
1/2 tsp baking soda
1/4 tsp salt
1/4 cup cocoa powder
2 tbsp almond butter
10-12 Medjool dates
1 tsp peppermint extract
“flax eggs” 2 tbsp ground flaxseed left soaking for 3-5 min in 3 tbsp of water
1-2 scoops of your favorite chocolate protein powder
1/2 cup of enjoy life mini chocolate chips

Preheat your oven to 350°F
Take care of your dry ingredients
In a food processor combine all of your dry ingredients. Process until you have a fine flour and all ingredients are well combined.
**If you want some extra muscle building power, add in a couple scoops of your favorite chocolate protein powder.**
Add your wet ingredients
Add your wet ingredients to the mixture in the food processor. Process until the mixture is well combined. You will know it is ready when it forms a giant delicious cookie ball.
**If you want, you can stop here and form small balls with the cookie mixture, place them in the fridge for 2-3 hours and eat them raw. This is the beauty of vegan cookies.**
Form the cookies
Place your giant cookie ball in a large bowl. Add the enjoy life mini chocolate chips and fold them into the mixture. The easiest way to do this is to wet your hands with warm water and fold the mixture by hand.
Next, you are going to use a cookie scoop, or a spoon if you don’t have one, and put a small amount of the cookie dough in your hands. Roll this dough in your hands to make it nice and round and then smush it flat onto a non-stick cookie sheet or parchment paper.
Bake em to perfection, add some holiday magic and enjoy
Bake the cookies for 10-12 minutes. While they are baking crush your candy cane into small pieces. As soon as you remove the cookies from the oven throw the crushed candy cane on top while they are still hot. Let them cool and enjoy this perfect holiday treat.
